Istanbul's dive-bar map is less about one American template than about worn-in Kadikoy rock rooms, cheap-beer locals, bohemian multi-floor bars, underground DJ basements, and late jazz. Every stop here is supported by explicit dive characteristics or a verified live-music identity; a generic pub label was not enough.
